Ingredients
12 ounces fettuccine or your choice of pasta
2 boneless, skinless chicken breasts, diced
2 tablespoons olive oil
1/4 cup butter
1 cup heavy cream
3 cloves garlic, minced
1 cup grated Parmesan cheese
Salt and pepper to taste
Chopped parsley, for garnish (optional)
Instructions
Cook the pasta in a large pot of salted boiling water according to package instructions until al dente, usually 8-10 minutes. Drain and set aside, reserving a cup of pasta water.
Sauté the chicken in a large skillet with olive oil over medium heat. Season with salt and pepper, cooking until golden brown and fully cooked, about 5-7 minutes. Remove and set aside.
Prepare the sauce by melting the butter in the same skillet over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.
Add the heavy cream, stirring to combine with the garlic butter. Simmer for 2-3 minutes until slightly thickened.
Combine the grated Parmesan cheese gradually, mixing until smooth. Adjust thickness with reserved pasta water, if necessary.
Mix everything together by adding the cooked pasta and chicken back to the skillet. Stir well to coat and cook for an additional 2-3 minutes.
Garnish with chopped parsley and serve immediately.
Notes
For a vegetarian option, replace chicken with sautéed mushrooms or roasted vegetables.
