Warm and comforting, Chicken Vegetable Soup is a delightful dish that brings together tender chicken, vibrant vegetables, and flavorful broth in one nourishing bowl.

Ingredients

  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 onion, chopped
  • 2 garlic cloves, minced
  • Optional: 1 cup of your favorite leafy greens (spinach or kale)
  • 1 pound boneless, skinless chicken breast (or thighs)
  • 6 cups chicken broth (or vegetable broth for vegetarian)*
  • Salt and pepper to taste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 tablespoons olive oil
  • Optional: 1 cup cooked rice, quinoa, or barley

Instructions

  1. Sauté the vegetables: In a large pot, heat olive oil over medium heat. Add the chopped onion, carrots, celery, and minced garlic. Sauté for about 5 minutes, or until the vegetables soften.
  2. Cook the chicken: Add the chicken breast to the pot, cooking for about 5-6 minutes until it’s browned on the outside but not fully cooked through.
  3. Add the broth and seasonings: Pour in the chicken broth and add the dried thyme, oregano, salt, and pepper. Stir everything together and bring the soup to a boil.
  4. Simmer until done: Reduce the heat to low, cover the pot, and let the soup simmer for about 20 minutes. The chicken should be fully cooked and tender.
  5. Shred the chicken: Remove the chicken from the pot and shred it using two forks. Return the shredded chicken to the soup and stir in any optional leafy greens. Simmer for an additional 5 minutes.
  6. Serve warm: Taste the soup and adjust the seasoning if necessary. Serve warm, either on its own or with your favorite bread.

Notes

For a thicker soup, let it simmer uncovered for a few minutes. Adjust seasoning as per personal taste.
