Ingredients
2 carrots, chopped
1 onion, chopped
2 celery sticks, chopped
2 garlic cloves, minced
1 can of chopped tomatoes
4 cups of vegetable broth
Salt and pepper to taste
Optional: herbs like thyme or parsley
Instructions
Sauté the vegetables: In a large pot, heat a splash of oil over medium heat. Add the chopped onion, garlic, carrots, and celery. Sauté for about 5-7 minutes or until the vegetables are softened, stirring occasionally.
Add tomatoes and broth: Stir in the can of chopped tomatoes and 4 cups of vegetable broth. Mix well and bring the mixture to a gentle boil.
Simmer the soup: Once boiling, lower the heat to a simmer. Let the soup cook for about 20 minutes, allowing the flavors to meld. You’ll know it’s ready when the vegetables are tender.
Season to taste: After simmering, add salt, pepper, and any optional herbs you like, such as thyme or parsley.
Choose your texture: At this point, you can decide how you want to serve your soup. For a smooth texture, use an immersion blender to blend until creamy. If you prefer a chunkier feel, simply leave it as is.
Serve warm: Ladle the soup into bowls and serve warm.
Notes
Take time to properly sauté the vegetables for added sweetness. Add fresh herbs just before serving for maximum flavor.
