Ingredients
8 ounces elbow macaroni
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
2 cups milk
2 cups shredded sharp cheddar cheese
1 teaspoon mustard powder
Salt and pepper to taste
Optional: 1/2 cup breadcrumbs
Instructions
Cook the pasta: In a large pot, boil salted water and cook the elbow macaroni according to package directions until al dente. Drain and set aside.
Make the roux: In the same pot, melt the butter over medium heat. Once melted, whisk in the flour and cook for about 1 minute until you form a smooth paste.
Add milk: Gradually pour in the milk while constantly whisking to prevent lumps. Continue cooking and stirring until the mixture thickens, about 2-3 minutes.
Incorporate cheese: Reduce heat to low, and stir in the shredded cheddar cheese, mustard powder, salt, and pepper. Stir until the cheese is fully melted and the sauce is smooth.
Combine pasta and sauce: Mix the cooked macaroni into the cheese sauce, stirring until the pasta is evenly coated.
Optional baking step: If using breadcrumbs, transfer the mac and cheese to a greased baking dish. Sprinkle breadcrumbs over the top and bake at 350°F (175°C) for about 20 minutes until bubbly and golden.
Notes
For extra flavor, consider adding spices like cayenne pepper or mixing in different cheeses.
