Elegant and rich chocolate-flavored French macarons with a striking black color, perfect for any celebration.

Ingredients

  • 100 grams granulated sugar
  • 100 grams egg whites
  • 105 grams almond flour
  • 105 grams powdered sugar
  • 4 grams egg white powder (optional)
  • Black gel food coloring
  • 85 grams unsalted butter, at room temperature
  • 85 grams milk
  • 73 grams granulated sugar
  • 15 grams all-purpose flour
  • 1/2 tsp vanilla extract

Instructions

  1. Preheat your oven to 150°C (300°F). Line two baking sheets with parchment paper.
  2. Sift together the almond flour and powdered sugar. Set aside.
  3. Whip the egg whites until soft peaks form, then gradually add the sugar and whip to stiff peaks.
  4. Add in the food coloring and fold until evenly distributed.
  5. Combine the sifted almond flour and sugar mixture with the whipped egg whites, mixing until the batter flows like lava.
  6. Pipe circles onto the baking sheets and tap to release air bubbles.
  7. Rest the shells at room temperature for 30-60 minutes until dry to the touch.
  8. Bake for about 15 minutes, rotating trays halfway through.
  9. Cool completely before removing from sheets.
  10. Make the Ermine buttercream by whisking milk and flour until thick, then beating in butter and sugar, finishing with vanilla.
  11. Assemble the macarons by piping filling onto one shell and sandwiching with another.

Notes

Use aged egg whites for better peaks and avoid humidity during preparation.
