Chili Mac is a comforting one-pot dish that combines chili flavors with creamy macaroni, perfect for busy weeknights.

Ingredients

  • 1 pound ground beef
  • 1 onion, diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 2 cups macaroni pasta
  • 2 tablespoons chili powder
  • 1 teaspoon cumin
  • Salt and pepper to taste
  • 2 cups shredded cheddar cheese
  • 1 cup milk
  • 2 tablespoons butter

Instructions

  1. Brown the beef: In a large skillet, cook the ground beef over medium heat. Stir frequently until browned, about 5 minutes. Drain any excess fat.
  2. Sauté onion and garlic: Add the diced onion and minced garlic to the skillet with the beef. Sauté for another 3-4 minutes, until the onion is soft and translucent.
  3. Mix in the beans and tomatoes: Stir in the kidney beans, diced tomatoes, chili powder, cumin, salt, and pepper. Let the mixture simmer for about 10 minutes to allow the flavors to meld.
  4. Cook the macaroni: While the chili mixture simmers, cook the macaroni according to package instructions. Drain and set aside.
  5. Prepare the cheese sauce: In a separate pot, melt the butter over low heat. Slowly stir in the milk and shredded cheddar cheese, continuing to stir until it becomes melted and creamy.
  6. Combine everything: Mix the cooked macaroni with the chili mixture in the large skillet. Then fold in the cheese sauce until everything is well combined and creamy.
  7. Serve: Spoon the chili mac into bowls and serve hot. Enjoy your comforting meal!
