Ingredients

  • 1 pound ground beef (85/15)
  • 1 small yellow onion, diced
  • 3 teaspoons garlic, minced
  • 1 jalapeño, minced (remove membrane and seeds)
  • 1 Anaheim pepper, minced
  • 15 oz can black beans, drained and rinsed
  • 15 oz can diced tomatoes with green chiles
  • 15 oz can corn, drained
  • 4 cups chicken broth
  • 1-2 packages taco seasoning
  • Zest of 1 lime
  • Juice of 1/2 lime (more as desired)
  • 1 teaspoon kosher salt
  • 1/4 teaspoon ground black pepper
  • 1/2 teaspoon dried oregano leaves
  • 4 oz – 8 oz cream cheese, softened
  • Sour cream (optional)
  • Fresh cilantro (optional)
  • Shredded cheese (optional)
  • Avocado (optional)

Instructions

  1. Cook the ground beef in a large Dutch oven over medium-high heat, breaking it apart until fully browned. Drain excess grease.
  2. Sauté the diced onion and minced garlic for 2-3 minutes, until the onion becomes soft and fragrant.
  3. Add the minced jalapeño, Anaheim pepper, 1 package of taco seasoning, black beans, diced tomatoes, corn, chicken broth, lime zest, lime juice, salt, pepper, and oregano; mix until well combined.
  4. Adjust the flavor as desired by adding more taco seasoning, lime juice, and salt.
  5. Incorporate the softened cream cheese, stirring until it melts and fully combines.
  6. Simmer the soup for about 10 minutes to allow flavors to meld together; serve with your choice of toppings.

Notes

Use fresh ingredients for optimal flavor. Don’t rush on browning the beef for a richer flavor. Adjust spices according to taste.
