Ingredients

  • 1.5 lbs chicken thighs or breasts, cubed
  • 4 cups chicken broth
  • 4 carrots, chopped
  • 3 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup green beans, trimmed
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Combine Ingredients: In a slow cooker, add the chicken, carrots, potatoes, onion, garlic, and green beans.
  2. Add Broth and Herbs: Pour in the chicken broth and sprinkle the thyme and rosemary over the top.
  3. Season: Add salt and pepper to taste, adjusting based on your preference.
  4. Cook: Cover and cook on low for 6-8 hours or on high for 4 hours. The chicken should be tender and the vegetables soft.
  5. Serve: Once done, give the stew a good stir and serve hot, enjoying your cozy meal!

Notes

Chicken thighs provide more flavor and tenderness than breasts but feel free to use either based on preference. You can substitute green beans with peas or corn. For added depth of flavor, consider using homemade chicken broth.
