A fun and spooky twist on classic mac and cheese, perfect for Halloween with customizable colors and creamy cheese.

Ingredients

  • 8 oz gheroni pasta
  • 2 cups cheese (such as cheddar and Monterey Jack)
  • 2 tbsp butter
  • 2 tbsp flour
  • 2 cups milk
  • 1 tsp garlic powder
  • Salt to taste
  • Pepper to taste
  • Food coloring (green or purple, optional)

Instructions

  1. Begin by cooking the gheroni pasta according to the package instructions. When finished, drain and set aside.
  2. In a medium saucepan, melt the butter over medium heat. Once melted, stir in the flour and let it cook for about 1 minute to combine.
  3. Gradually whisk in the milk, stirring continuously. Keep doing this until the sauce thickens, which should take about 3 to 5 minutes.
  4. Mix in the garlic powder, salt, and pepper. After seasoning, add in the cheese gradually, stirring until it’s completely melted and creamy.
  5. If you want to give your cheese sauce a spooky color, add a few drops of food coloring to achieve your desired shade. Stir well to combine.
  6. Carefully fold the cooked gheroni pasta into the cheese sauce, ensuring each piece is well coated.
  7. Serve the ghoul-gheroni and cheese in playful bowls or top with spooky ingredients like olive “eyeballs” or crushed crackers for a fun twist.

Notes

Don’t overcook the pasta; aim for al dente. You can also mix your cheeses for a unique flavor profile.
