A delightful way to enjoy a sweet snack while keeping your calorie count in check, combining creamy peanut butter, crunchy peanuts, and dark chocolate with ripe bananas.

Ingredients

  • 2 large firm, ripe bananas (about 240g total)
  • 2-3 tablespoons natural creamy peanut butter (unsweetened)
  • 2 tablespoons roasted unsalted peanuts, roughly chopped
  • 1/4 cup (40g) dark chocolate chips (70% cacao or higher)
  • 1 teaspoon coconut oil
  • Sea salt flakes (optional)
  • Optional add-ins: mini pretzel pieces, shredded coconut, chopped dates

Instructions

  1. Peel the bananas and slice them into thick coins, about 1/2 inch each (you should get 16-20 coins).
  2. Arrange the banana slices on a parchment-lined baking sheet, ensuring they do not touch. Freeze the banana slices for 15-20 minutes, until they are firm but not rock hard.
  3. Remove the banana slices from the freezer and spread about 1/2 teaspoon of peanut butter on each banana coin. Sprinkle each with chopped peanuts and a pinch of sea salt (if using) and add any optional toppings.
  4. In a microwave-safe bowl, combine the chocolate chips and coconut oil. Microwave in 15-second increments, stirring each time until melted and smooth (this should take about 45 seconds total).
  5. Drizzle the melted chocolate over each banana bite, or dip the tops for a thicker coating if desired.
  6. Return the tray to the freezer for 30-60 minutes, until the chocolate is set and the bananas are frozen solid.
  7. Let sit at room temperature for 5 minutes before serving for the best texture. Enjoy immediately, and store leftovers in a freezer-safe container.

Notes

Ensure bananas are ripe for the best flavor and sweetness. Don’t rush the freezing process; letting the bites freeze completely helps prevent melting during serving.
