A comforting twist on a classic American dish, this one-pan meal combines the hearty flavors of Sloppy Joes with tender potatoes, perfect for busy weeknights or cozy family dinners.

Ingredients

  • 1 pound ground beef (or ground turkey)
  • 4 medium potatoes, diced
  • 1 medium onion, finely chopped
  • 1 green bell pepper, diced
  • 2 cloves garlic, minced
  • 1 cup ketchup
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon chili powder
  • ½ teaspoon paprika
  • Salt and pepper, to taste
  • 2 tablespoons olive oil
  • Shredded cheese (optional, for topping)
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Prepare the potatoes: Wash and dice them into bite-sized pieces.
  2. Cook the beef: Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Add the ground beef and cook until browned, about 5-7 minutes. Drain excess fat if necessary.
  3. Sauté the vegetables: Add the remaining olive oil to the skillet. Toss in the chopped onion, green bell pepper, and minced garlic. Sauté for about 3-4 minutes until softened.
  4. Combine the ingredients: Stir in the ketchup, Worcestershire sauce, brown sugar, chili powder, paprika, salt, and pepper. Simmer for 5-7 minutes, stirring occasionally.
  5. Cook the potatoes: Add the diced potatoes, stirring to combine. Pour in about ½ cup of water, cover, and reduce heat to low. Cook for 15-20 minutes or until the potatoes are tender.
  6. Check for doneness: Remove the lid and check that the potatoes are fork-tender.
  7. Add cheese (optional): Sprinkle shredded cheese on top during the last couple of minutes, covering to melt.
  8. Garnish and serve: Garnish with chopped parsley before serving.

Notes

Keep an eye on the potatoes to avoid overcooking. Fresh ingredients enhance flavor significantly.
