A delightful, light dish transforming spaghetti squash into a comforting meal with garlic and Parmesan.

Ingredients

  • 1 medium spaghetti squash
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Red pepper flakes (optional, for heat)
  • Fresh parsley for garnish

Instructions

  1. Preheat your oven to 400°F (200°C) to get it nice and hot for roasting the squash.
  2. Cut the spaghetti squash in half lengthwise and scoop out the seeds using a spoon.
  3. Brush the inside of each half with olive oil and generously season with salt and pepper.
  4. Place the squash cut-side down on a baking sheet and roast for 30-40 minutes until tender.
  5. Heat a pan over medium heat, add the minced garlic, and sauté until fragrant, about 2-3 minutes.
  6. Use a fork to scrape the flesh of the squash into spaghetti-like strands and transfer them to the pan with the sautéed garlic.
  7. Mix in the grated Parmesan cheese until melted and creamy, adding red pepper flakes if desired.
  8. Serve the spaghetti squash warm, garnished with freshly chopped parsley.

Notes

Opt for fresh Parmesan for the best flavor. Substitute with a dairy-free cheese for a vegan option and add red pepper flakes for heat.
