Ingredients
1 tablespoon olive oil
1 medium onion, chopped
2 cloves garlic, minced
2 carrots, diced
2 celery stalks, diced
2 medium potatoes, diced
2 cups kale or spinach, chopped
6 cups vegetable broth (low-sodium recommended)
Salt and pepper to taste
1 teaspoon dried thyme or 1 bay leaf
Instructions
Sauté the olive oil in a large pot over medium heat. Add the chopped onions and minced garlic, sautéing until fragrant and translucent, about 3-4 minutes.
Add the diced carrots and celery. Continue to sauté for another 3-4 minutes until they start to soften.
Incorporate the diced potatoes to the pot. Sauté for a few more minutes, stirring occasionally to help them cook evenly.
Pour the vegetable broth into the pot and bring the mixture to a boil over high heat.
Add the chopped kale or spinach once boiling. Cook until just wilted, about 2-3 minutes.
Season the soup with salt, pepper, and thyme (or bay leaf), adjusting to taste.
Simmer for about 20 minutes or until all vegetables are tender and flavorful.
Serve the soup warm, garnished with additional herbs if desired.
